Rinse and Pat dry the chicken.
Apply Avacado oil liberally, all over the skin and under the skin.
Salt and Pepper generously.
Place the chicken breast-side down on a roasting pan.
Place chicken in a preheated oven of 450 F, in the middle rack.
Roast chicken for 20-30 Minutes.
After this time, Flip the chicken over and roast until the thick part of the breast is 130-140 F for 15-20 Minutes.
Increase Oven to 475-500 F to roast skins until golden brown and bubbling.
Allow chicken to roast for an additional 10-15 minutes, until temperature reaches 160-175 F.
Allow chicken to rest for 15-20 minutes before serving.
