Crispy Roasted Chicken

This recipe is simple and versatile. It's a favorite here at our homestead! Keep the bones and scraps for bone broth afterward.

  • 1 3-4 Lb. Chicken
  • Avocado Oil
  • Redmond's Seasoned Salt with Herbs
  • Pepper


  • Rinse and Pat dry the chicken.
  • Apply Avacado oil liberally, all over the skin and under the skin.
  • Salt and Pepper generously.
  • Place the chicken breast-side down on a roasting pan.
  • Place chicken in a preheated oven of 450 F, in the middle rack.
  • Roast chicken for 20-30 Minutes.
  • After this time, Flip the chicken over and roast until the thick part of the breast is 130-140 F for 15-20 Minutes.
  • Increase Oven to 475-500 F to roast skins until golden brown and bubbling.
  • Allow chicken to roast for an additional 10-15 minutes, until temperature reaches 160-175 F.
  • Allow chicken to rest for 15-20 minutes before serving.
