Crispy Roasted Chicken

This recipe is simple and versatile. It's a favorite here at our homestead! Keep the bones and scraps for bone broth afterward.
Course: Main Course

Ingredients
  

  • 1 3-4 Lb. Chicken
  • Avocado Oil
  • Redmond's Seasoned Salt with Herbs
  • Pepper

Method
 

  1. Rinse and Pat dry the chicken.
  2. Apply Avacado oil liberally, all over the skin and under the skin.
  3. Salt and Pepper generously.
  4. Place the chicken breast-side down on a roasting pan.
  5. Place chicken in a preheated oven of 450 F, in the middle rack.
  6. Roast chicken for 20-30 Minutes.
  7. After this time, Flip the chicken over and roast until the thick part of the breast is 130-140 F for 15-20 Minutes.
  8. Increase Oven to 475-500 F to roast skins until golden brown and bubbling.
  9. Allow chicken to roast for an additional 10-15 minutes, until temperature reaches 160-175 F.
  10. Allow chicken to rest for 15-20 minutes before serving.
