Method
- Drain beans and set aside.
- Saute onions until translucent.
- Pour in tomatoes (with juice), beans, chilis, and broth (pour in about 1 cup). Bring to a bubbling boil.
- Add in pumpkin puree and spices and incorporate them well.
- If it looks too thick to your liking, add in more broth or water.
- If using a slow cooker, cook on low for 6-8 hours or high for 4 hours.
- If cooking on the stovetop, simmer for 1 hour.
Notes
This recipe is very modifiable.
Add ground beef or shredded beef or sausage.
No canned beans? Rinse and soak dried beans.
No Diced tomatoes? Use fresh!
No Ranch seasoning? Skip it or make your own with garlic powder, salt, parsley, dill, oregano, and dehydrated buttermilk.
