Whipped Coconut Topping

This is a great vegan and dairy free alternative to whipped cream. It's not as "stiff" as other dairy free whipped cream alternatives because it does not contain gums or fillers.

Ingredients
  

  • 1 Can Full Fat Coconut Milk (VERY COLD) In the fridge for at least 24 hrs
  • 6 TBSP Maple Syrup
  • .5 TSP Vanilla Extract

Equipment

  • Stand or Hand Mixer

Method
 

  1. Scrape out cream and discard the liquid at the bottom of the container.
  2. Mix cream and other ingredients together and mix on high.
  3. It will become more solid and slightly puffy.
  4. Serve it right away or store in the fridge for later use.
