Whipped Coconut Topping
This is a great vegan and dairy free alternative to whipped cream. It's not as "stiff" as other dairy free whipped cream alternatives because it does not contain gums or fillers.
- Stand or Hand Mixer
- 1 Can Full Fat Coconut Milk (VERY COLD) In the fridge for at least 24 hrs
- 6 TBSP Maple Syrup
- .5 TSP Vanilla Extract
- Scrape out cream and discard the liquid at the bottom of the container.
- Mix cream and other ingredients together and mix on high.
- It will become more solid and slightly puffy.
- Serve it right away or store in the fridge for later use.
