Honey Oat Muffins

Honey Oat Muffins

Simple, Gluten and Dairy free treat. Filling and extra delicious with jam and butter.
Servings: 1 dozen
Course: Breakfast

Ingredients
  

  • 3.5 Cups Whole Oat Flour You can grind your own flour in a food processor. See notes below.
  • 1.5 Cup Full Fat Coconut Milk You can use dairy.
  • 1/2 – 3/4 Cup Honey 3/4 cup is VERY sweet.
  • 1.5 Tsp Baking Soda
  • 1.5 Tsp Baking Powder
  • 1.5 Tsp Vanilla Extract
  • 1 pinch of salt
  • 2 eggs

Equipment

  • Bowl
  • Spoon
  • Muffin Tin

Method
 

  1. Preheat oven to 350 degrees F.
  2. Mix all ingredients together thoroughly.
  3. Pour batter in to greased muffin tins, or greased parchment paper cups.
  4. Allow to cook evenly and check around 7-8 minutes.
  5. Allow to cook another 7-8 minutes or until risen and formed well.
  6. Once baked, place muffin on a cooling rack and enjoy hot with butter and jam.
  7. Enjoy!

Notes

To grind your own flour, use old fashioned oats or a mixture of quick cooking oats and old fashioned oats. Pulse 3.5 Cups until it resembles whole wheat bread flour (grainy, but fine). Make sure to pulse a few times instead of using the processor setting. This could grind the oats too quickly.
