
Slow cooker Tuscan Chicken

Method
- Season both sides of the chicken breasts with salt and pepper.
- Place the chicken breasts in the bottom of the slow cooker. Sprinkle the garlic, sun-dried tomatoes, and artichoke hearts evenly over the chicken.
- Pour the chicken broth over the ingredients. Sprinkle with Italian seasoning.
- Cover and cook in a slow cooker on low for 4-6 hours or high for 2-3 hours, until the chicken is tender and fully cooked (internal temperature of 165°F).
- Optional: About 15 minutes before serving, stir in the spinach and let it wilt.If using heavy cream or cream cheese, stir it in at this time to create a creamy sauce.
- To Serve: Remove the chicken from the slow cooker and spoon the sauce over the top. Garnish with Parmesan cheese and fresh basil, if desired. Serve with rice, pasta, or crusty bread.
