SlowCooker Tuscan Chicken

Slow cooker Tuscan Chicken

Cook in a dutch oven or slow cooker for a delicious and nutritious weeknight meal. Serve it over rice, pasta or roasted potatoes.

Ingredients
  

  • 4-6 Chicken Breast
  • 1 tsp salt (adjust to taste)
  • 1/2 tsp pepper
  • 4-5 cloves minced garlic
  • 1/2 cup Sun-dried tomatoes chopped
  • 1 14oz Jar, Artichoke hearts
  • 2 cups Fresh spinach 1/2 cup, frozen
  • 1 cup Chicken broth
  • 2 tsp Italian seasoning
  • 1/2 cup heavy cream (optional)

Method
 

  1. Season both sides of the chicken breasts with salt and pepper.
  2. Place the chicken breasts in the bottom of the slow cooker. Sprinkle the garlic, sun-dried tomatoes, and artichoke hearts evenly over the chicken.
  3. Pour the chicken broth over the ingredients. Sprinkle with Italian seasoning.
  4. Cover and cook in a slow cooker on low for 4-6 hours or high for 2-3 hours, until the chicken is tender and fully cooked (internal temperature of 165°F).
  5. Optional: About 15 minutes before serving, stir in the spinach and let it wilt.If using heavy cream or cream cheese, stir it in at this time to create a creamy sauce.
  6. To Serve: Remove the chicken from the slow cooker and spoon the sauce over the top. Garnish with Parmesan cheese and fresh basil, if desired.
    Serve with rice, pasta, or crusty bread.
